La famiglia dei Fugger ad Augusta in Germania, con gli ingenti guadagni del commercio delle spezie intercorso con i veneziani, arriv\u00f2 fino al punto di mettere in pericolo il monopolio bancario italiano.&nbsp; I Medici e i Salutati a Firenze che gestivano i prodotti dell\u2019industria tessile e il mercato del denaro liquido, erano grandi commercianti di spezie.<\/p>\n\n\n\n<p>Si pu\u00f2 dire che a parte le \u201cagliate\u201d realizzate con i bulbi importati dalla Spagna e dagli orti dei Mauri del Sahara, tutte le salse, dalla \u201cpeperata\u201d, alla \u201ccominata\u201d, compresa la \u201cgarofolata\u201d, erano a base di droghe coloniali.&nbsp; In seguito sotto Luigi XII si suddivisero in distillatori di acquavite o di spirito di vino e credenzieri.&nbsp; Sono anche gli anni in cui le salse, soprattutto la mostarda, venivano vendute agli angoli delle strade delle principali citt\u00e0 della mitteleuropa.&nbsp; Anche se la mostarda \u00e8 una preparazione tutto sommato romana \u2013 come tra l\u2019altro afferma un celebre medico Hermannus Boerhaave (1668-1738) (\u00b0\u00b0) \u2013 sono le citt\u00e0 di Digione e di Angers a fabbricare questa salsa come le conosciamo ancora oggi<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><strong>Un classico delle tavole medievali di mezza Europa<\/strong>.<\/h2>\n\n\n\n<p>La salsa camelina non mancava mai nei banchetti per essere abbinata alle carni bollite, agli arrosti di cacciagione, ma anche al pesce (in particolare durante i digiuni religiosi).<\/p>\n\n\n\n<p>Qualcuno sostiene che il nome \u201ccamelina\u201d possa essere legato alla presenza della cannella o anche al \u201ccolore del pelo del cammello\u201d.<\/p>\n\n\n\n<p>Nella sua versione francese la spezia dominante era lo zenzero, nelle salse inglesi e dei paesi nordici si impiegavano sia i chiodi di garofano che la noce moscata, come ci raccontano i trattati di cucina fin dal XIV secolo.<\/p>\n\n\n\n<p>La camelina era una delle salse pi\u00f9 comuni utilizzate nel Medioevo. Era cos\u00ec comune che poteva essere acquistata gi\u00e0 pronta dai venditori nella Parigi della fine del XIV secolo. Quando il <a href=\"https:\/\/it.wikipedia.org\/wiki\/M%C3%A9nagier_de_Paris\">M\u00e9nagier<\/a> istruiva la sua nuova moglie sulla spesa, scriveva: &#8220;Dal salumiere, tre mezze pinte di camelina diluito in 10 cl. d&#8217;acqua<\/li><li>1 cucchiaino di cannella in polvere<\/li><li>1\/4 di cucchiaino di chiodi di garofano in polvere (quantit\u00e0 massima &#8211; per un gusto meno forte ridurne style=\"background-color:#00d1848f\">Lavare e poi mettere a bagno per 1 ora l&#8217;uva passa in acqua tiepida. Tritare finemente le mandorle, quindi stemperarle in un po&#8217; d&#8217;acqua.<br>Frullare l&#8217;uva passa insieme alle spezie e alla mollica di pane ammollata in un po&#8217; d&#8217;acqua.<br>Aggiungere il latte di mandorle con l&#8217;uvetta ed aggiungere l&#8217;agresto.
